Serves Approximately 30 tasting portions
8 lbs Red Bliss potatoes, washed
2 cups olive oil
1 ½ cups scallion, chopped
¾ cup vinegar
2 Tbsp honey
2 Tbsp Dijon mustard
salt and pepper to taste
parsley (optional)
Place potatoes in a pot and cover with cold water. Salt the water. Bring to a boil and simmer until potatoes are tender (if a knife easily pierces through the middle of the potato, it is tender). Drain and let steam for 10 minutes. Cut potatoes into quarters or eighths. Mix the remaining ingredients and pour over warm potatoes. Add salt and pepper to taste. Add parsley if desired. Let marinate for one hour. Enjoy!
