
Summer Cooking, Broccoli Furnishes Vitamin A

On this episode of Listen to Nutrition, host Iva Bennett talks about one of her favorite vegetables: broccoli. "Put some raw broccoli buds and cauliflower florets on your hors d'oeuvres tray and your relish tray, and you'll be surprised how fast they'll disappear!"
She describes the proper way to cook broccoli and gives servings suggestions. "A good low-cost meal, with a combination of foods most people like, is a tomato cheese rarebit on toast with buttered broccoli baked potato. For dessert, there is a fruit Betty with lemon sauce. Milk for children and the adults who want it."
