Food 'Science'

Marion Nestle, professor emerita of nutrition, food studies, and public health at NYU and the author of many books, including Unsavory Truth: How Food Companies Skew the Science of What We Eat (Basic Books, 2018), delves into the problematic relationship between food science and the food industry.
