Blanche Irene Welzmiller presents recipes for "that elusive vegetable, the eggplant" from the Department of Public Markets. "The eggplant has a mysterious and fascinating history, with its relationship to the potato and the tomato and as a member of the nightshade family, which accounts for its deep purple color." Recipes emphasize avoiding serving spoiled or overcooked eggplant. Program cuts off. Station ID and outro for segment.

Mrs. Welzmiller is the Deputy Commissioner of the Department of Public Markets in charge of the Bureau of Information and Home Economics. She was appointed by Mayor Hylan in 1919. Welzmiller has a BS and MA from Columbia University. She taught literature and was active in the Women's Suffrage Party. During World War I Welzmiller sold Liberty bonds and was a speaker with the Liberty Loan organization when started the Plenty Food League, an organization of 300,000 women in New York state spreading the word about good nutrition.
