Recipe: Joe Lambert's Grandma's Refrigerator Cookies

2 Cups Brown Sugar
2 Eggs
2 sticks Melted butter (not too hot)
1 teaspoon vanilla
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 1/4 cups chopped walnuts
For the following I use an electric mixer with paddle wheel:
Cream eggs and sugar until smooth, light in color and fluffy. Slowly add melted butter like your making mayo. (scrape down mixing bowl as necessary) Add vanilla and mix again. Mix flour, salt and soda in a separate bowl and add it in portions to the wet ingredients while mixing. Don't have to worry about gluten so there is no rush. Finally add chopped walnuts to mixture.

Separate into two and roll into about a 2" tube. Wrap in plastic and place in fridge overnight - or in freezer for a couple of hours if you messed up your timing.

Preheat oven to 350-375 and preheat one or two sheet pans. Take tube out of fridge and cut very thin 1/8" cut enough to fit into one baking pan. Put tube back in refrigerator till next cutting (do everything to keep dough cold, don't even touch too much). Bake for about 10 minutes, till just golden because burnt Grandma's cookies taste horrible. Cool on rack. Repeat. Eat crunchy when cooled.
