Locavores seek out farm-to-table restaurants and local produce because there's a sense that it benefits small farms in our area. But what about the workers who harvest the ramps and dandelions that make it to trendy Manhattan tables?  In Labor and the Locavore: The Making of a Comprehensive Food Ethic , Margaret Gray, Associate Professor of Political Science at Adelphi University, focuses on the vibrant Hudson Valley food economy and looks at how the farm-to-table movement has affected the lives of farm workers.
